    1.25 cup lentils, rinsed and sorted
    6 cups water or stock
    1 onion, chopped
    1 cup sliced mushroom
    1 cup carrot, diced
    1 cup celery, diced
    Trader Joe's 21 seasoning salute
    salt and pepper to taste


Saute onion, mushroom, celery, and carrot in olive oil. Add garlic and cook a little more.

Put the lentils (once you clean them) into the slow cooker with the water or stock, and add the sauteed veggies. Add seasoning to taste - this time I used Trader Joe's seasoning salute, but you could also go with curry powder, or a Lipton Soup mix, to get different flavors.
