    2 T olive oil
    3 medium potatoes, peeled & diced
    2 medium onions, chopped
    4-6 garlic cloves, chopped
    1 lb kale, coarsely chopped
    1 bay leaf
    salt & pepper to taste
    1 can garbanzo beans
    1 can diced tomatoes
    1 lb. diced chourico (no casing)
    12 cups broth


Heat oil - cook potatoes & onions. Cover, let cook 5 min stirring ocassionally. Add garlic, kale, bay leaf. Cover & wilt kale 2 min. Season with salt & pepper. Add beans, tomatoes, chourico & broth. Boil. Reduce heat to medium. Cook 5-10 min until potatoes are tender. Let sit in pot to blend all flavors 30 min or so.
Serve with crusty bread & enjoy! (makes 20 1 cup servings)
