    Carrots, raw, 1 medium
    Spinach, fresh, 2 cups
    Pacific Cod, 6 oz
    Zucchini, baby, 0.5 medium
    Olive Oil, 1/8 tsp
    Hellmann's , Light Mayonnaise, 1 tsp
    *French's Hearty Deli Brown Mustard, 2 tsp
    Honey, 1/2 tsp
    Lea & Perrins, Worcestershire Sauce, 1 tsp


Sautee vegetables in olive oil until soft. Mix together mayo, honey, worcestershire, and mustard in a small bowl.

Place 2 cups fresh spinach on a large piece of aluminum foil, top with fish fillet. Brush fillet with honey/mayo/mustard mixture, then top with half of the vegetable mixture. Sprinkle with salt and pepper if desired, and seal aluminum foil packet

Bake at 425 for 20-30 minutes until fish flakes easily with a fork. Excellent when served with rice (not included in nutrition facts)
