Ingredients

    2 c cooked fettuccini
    12 oz. soft tofu, drained
    3 garlic cloves, minced
    1/4 c grated parmesan cheese
    1/4 c grated Romano cheese
    1 T olive oil
    1 T onion powder
    salt and pepper to taste

Directions

1. Cook the pasta according to the manufacturer’s instructions.
2. While the pasta is boiling, place the drained tofu, garlic, both cheeses, olive oil, and onion powder into a blender. Blend until smooth.
3. Pour soy mixture into a saucepan. Warm over medium heat, stirring occasionally.
4. Toss drained pasta with alfredo sauce.
5. Makes 4 servings.

  • Easy and delicious! Made it for dinner tonight. Even my 8 year old loved it. I substituted organic whole wheat spagetti instead of fettucini because that's what I had on had. Added chopped fresh collard greens to the spagetti while it boiled. Topped with leeks and extra parmesan. - 11/21/07
