Introduction

Ingredients

    2 c. whole wheat pastry flour
    3/4 c. unbleached flour
    1 T. baking powder
    1/2 t. salt
    1/2 c. egg substitute
    1 c. 2% milk
    1/2 c. unsweetened applesauce
    1/2 c. honey
    1/2 t. vanilla extract
    1 1/2 c. blueberries, fresh or frozen

Directions

Preheat oven to 400. Mix dry ingredients together. In a separate bowl, mix egg substitute, milk, applesauce, honey and vanilla. Beat well. Add dry ingredients and mix until just blended. Add blueberries. Do not overmix.
Fill papered muffin tins 2/3 full. Bake 20 min.
