    3 tablespoons Olive Oil
    1 cup onion, chopped
    1 green pepper, chopped
    1 cup celery, diced
    2 Cup Chunky Salsa
    salt to taste
    2 1/2 cups water
    1 pounds Salad shrimp,
    hot sauce to taste
    2 cups uncooked rice


1. Cook rice according to package directions.

2. Heat oil in a heavy pot. Stir in onions, peppers, garlic and celery.

3. Add the Salsa. Stir in salt and water. Simmer until vegetables are soft. Add the shrimp and cook covered until the shrimp are pink. This just takes a few minutes, depending on the size of the shrimp. Add hot sauce for flavoring, a few drops at a time.

4. Serve the shrimp mixture over hot cooked rice.
