Cauliflower replaces mashed potatoes - can't taste the difference! Cauliflower replaces mashed potatoes - can't taste the difference!
Number of Servings: 4


    1 1/4 lb lean ground beef
    1/2 each, chopped - bell peppers and onions
    1 carrot, chopped
    1 stalk celery, chopped
    1 tbsp olive oil
    1 large head cauliflower, steamed
    1/4 cup I Can't Believe It's Not Butter
    1/4 cup fat free sour cream
    1 can sweet corn
    Salt and pepper to taste


Mash steamed cauliflower, butter and sour cream together. Season with salt and pepper, set aside. Saute peppers, onions, celery and carrot until soft. Add ground beef and cook until browned. Season with salt and pepper to taste. In a casserole dish, layer beef & vegetable mix, drained can of corn and top with cauliflower "mashed potatoes". Bake in 350 preheated oven for 30 minutes. Serves 4.
