Ingredients

    2 cups dry mung beans
    8 cups water
    1 Tbsp canola oil
    6 - 9 tsp crushed garlic
    10 - 12 green onion, chopped, keep whites separate to sautee
    8 slices ginger, minced
    1 Tbsp salt
    1 can coconut milk
    200 grams fresh spinach

Directions

Cook beans in water for about 1 hour. Mash a little. Should be soupy. Sautee garlic, onion, ginger in oil. Add salt and continue to cook. Add some of the coconut milk and blend flavors. Add spinach and stir until wilted. Add coconut milk. Add to beans. Eat as soup or over hot rice. Makes 10 servings of about 1 cup each.
