    10 oz. shredded potatoes
    2 oz. reduced fat shredded cheese
    2 cups chopped asparagus
    2/3 cup egg whites
    2 large eggs


Brown the hash browns in a nonstick pan with your choice of spices until crispy. Spray an 8" x 8" casserole dish with nonfat cooking spray, and spread the crispy hash browns over the bottom for a "crust." Layer the chopped asparagus over the potatoes. Sprinkle the shredded cheese over the vegetables. Whisk together the eggs and egg whites, and pour over the entire casserole. Bake at 350 for 30 minutes, or until knife inserted in the center comes out clean.
