Introduction

Very Good cake. I sometime add 1 heaping tablespoon of Anise, like my grandmother used to do. Calories are reasonable and taste is excellent. (Added corn starch mimics cake flour - appx. 2 tbsp. per 1 cup flour. Very Good cake. I sometime add 1 heaping tablespoon of Anise, like my grandmother used to do. Ingredients

    1-1/4 cups white flour
    2 tbsp. corn starch
    2 tsp. baking powder
    1/2 tsp. baking soda
    2/3 cups sugar
    1 tdp. salt
    1/2 cup Better Butter (my recipe)
    1 cup milk (scant)
    1 large egg
    1 tsp. vanilla extract
    1/2 tsp almond extract

Directions

Whisk 1st six ingredients together well. Blend with pastry blender 1/2 cup Better Butter, recipe in my cookbook. Mix well together milk, egg and extracts. Add wet to dry and whisk for about one minute. Put into small oblong pan or 8" or 9" cake pan and bake for 30-35 minutes until toothpick come out clean. Cool and sift some powdered sugar on top, if desired.
