Number of Servings: 12


    1 c. sugar
    1/3 c. water
    1/3 c. applesauce
    2 eggs
    1 c. sweet potato
    1 1/4 c. flour
    1 tsp baking soda
    3/4 tsp salt
    1/2 tsp cinnamon
    1/4 tsp baking powder
    1 scoop protein powder*
    3 tsp brown sugar

    *I used FitSmart Shake mix that has 10 g fiber and 20 g protein. Used the old-fashioned vanilla flavor. You can use any protein powder, but your nutrition info will have less fiber and more protein.


Preheat over to 350 degrees F.

Combine sugar, water, applesauce, eggs, sweet potato puree. Mix in dry ingredients, but do not over-mix them. Might be slightly lumpy.

Pour into a greased loaf pan. Bake for 30-40 minutes or until toothpick comes out fairly clean.
