With a "cordon bleu" style, this Hawaiian Chicken dish is sure to thrill every taste bud, tummy, and nose!!! With a "cordon bleu" style, this Hawaiian Chicken dish is sure to thrill every taste bud, tummy, and nose!!!
Number of Servings: 4


    1 pound of chicken breast, bone and skin removed
    4 Tbsp teriyaki sauce
    4 oz pepper jack cheese, shredded
    4 slices of canned pineapple
    1 cup of pinapple juice reserves
    quarter cup of brown sugar
    quarter cup of lite margarine
    1 cup of onions, coarsley chopped
    half a cup of bell peppers, thinly chopped


Preheat your oven to 400. Saute onions and bell peppers with margarine in a hot skillet until slightly carmelized. In the mean time, put your chicken in a plastic bag and beat it with a hammer or meat clever until it's no more than half an inch thick. Pour in the teriyaki over the chicken and reseal the bag. Shake it around to get all the chicken marinated (let it sit about 5 minutes or less... whatever works for you!). Once your saute is done, take one piece of chicken in the palm of your hand and put about a heaping spoonful of the saute in the middle of the chicken. Top with an ounce of the shredded cheese. Roll it from one side to touch the other side (or as far as it will go) and place the chicken seam-side down in your baking dish. Repeat filling each piece of chicken. With your pineapple juice reserve, mix in the brown sugar by hand. It doesn't have to be pretty. :) Spoon over the top of your chicken and pour throughout the dish. Finally, top each piece of chicken with the pineapple ring. Bake for about 30 minutes.

This dish makes 4 servings, so make sure your pound of chicken is about 4 different breasts. Enjoy!
