    1.5 cup Whole Wheat Flour (Bob's Red Mill)
    .5 teaspoon Baking Soda
    1.25 teaspoon Baking Powder
    .75 Cup Splenda for cooking & baking
    1 teaspoon Ground Cinnamon
    3 Very Ripe Bananas (mashed)
    2 oz Dried Goji Berries (available at Costco & health food stores)
    .5 Cup Unsweetened Applesauce
    1/3 Cup Better N Eggs or Egg Substitute


Pre-Heat oven to 350 degrees (325 for Convection ovens). Mix Wheat, Baking Powder, Baking Soda, Splenda and Cinnamon in Large Bowl. Add Goji Berries to Mashed Bananas and add along with Apple Sauce and Eggs to dry mixture. Stir ingredients until just mixed (don't over-due it!).

Place paper cups in 12- muffin pan. Pour mixture evenly into cups. Bake for about 20 to 25 minutes depending on your oven... or until a toothpick inserted in a muffin comes out clean. Let cool about 10 minutes & ENJOY!!!

I like to re-heat in the microwave for about 15 seconds and spray on "I Can't Believe It's Not Butter" Zero Calorie Spray.
