    thickly slice yellow and green squash and onions.Cut celery into 1/2 inch pieces. Cut peppers into 1/2 inch pieces. Clean and quarter baby portabellas. Smash the garlic cloves with your knife.
    Lightly season all veggies w/ salt and pepper, then lightly dredge in flour.
    Lightly brown in HOT olive, then add canned tomatoes, juice and all. Crush the tomatoes as they cook. Let simmer for about 20 minutes. Serve w/ cooked brown rice...add meat, optional.
