    2 Tbsp olive oil
    1 beef chuck roast 3 lbs.
    2 sweet potatoes diced
    6 small carrots diced
    6 celery stalks diced
    3.33 cups white pearl onions
    6 Tbsp horseradish
    2 tsp salt
    1 tsp black pepper
    1.5 cups tap water
    .25 all purpose flour


Makes 8 1-cup servings

Brown beef in 2 tbsp of olive oil, about 10 minutes.

Spray slow cooker with cooking spray. Add vegetables and place beef on vegetables. Mix horeradish, salt,pepper with 1 cup water and pour over beef.

Cover cooker and set on high for 4.5 hours.

Remove beef and vegetables from cooker and keep warm.

Pour liquid from cooker and skim fat from liquid. Add enough water to liquid to measure 2 cups. In a seperate container mix flour with .5 cup water. Gradually stir four mixture into the cooker liquids and bring to a boil stirring constantly. Boil and stir 1 minute. Serve gravey with beef and vegetables.
