Introduction

Yummy, lots of gravy and very good comfort food at a low calorie and fat cost. Yummy, lots of gravy and very good comfort food at a low calorie and fat cost.

Ingredients

    1 cup reduced fat sour cream
    1 cup low fat cream of mushroom soup
    1 ounce white wine
    6 skinless, boneless chicken breasts
    6 strips 30% reduced fat bacon
    2 teaspoons salt
    1 teaspoon pepper

Directions

Preheat oven to 375.

In a medium bowl, combine the sour cream, mushroom soup, white wine, salt and pepper.

Saute bacon until it starts to crisp but is still somewhat pliable. Let bacon cool and then wrap a piece around a rolled up chicken breast. Lay the wrapped breast in a large casserole dish. Repeat with remaining breasts.

Pour the sour cream mixture over the breasts, cover with a lid and bake in the 375 oven for 45 minutes.

Serve over rice.
