Ingredients

    3 cups chopped tomatoes
    1 1/2 cups chopped cucumber
    1 large red onion (you can use any kind of onion you like)
    16oz Imitation crab meat
    14oz cooked shrimp
    1/4 cup fresh chopped cilantro
    1 TBS garlic powder (or 4 cloves fresh garlic minced)
    1TBS black pepper
    1/2 TBS salt
    1/3 cup fresh squeezed lime juice

Directions

Start by chopping the tomato, onion, cucumber, and cilantro and put in a large bowl. Then chop the crab meat and depending on what size shrimp you buy ( I get the large), you can cut them in half so it will seem like there is a lot more shrimp in the dish than there actually is. After putting all these ingredients in a bowl, give them a toss to help evenly mix them. Then add the garlic powder, black pepper and salt and toss all ingredients. Finally add the lime juice and give a final toss.

Yield 9 servings at 2cups

Note: this is good topped with any kind of dry cheese such as cotija or even feta. Avocado also goes well in this dish but keep in mind that any add ins will change the nutrition numbers. You might also try some fat free sourcream and baked tortilla chips. I like to eat mine on top of shredded lettuce like a salad. You don't even need dressing.
