Introduction

Healthy alturnative to the typical pumpkin bread. Healthy alturnative to the typical pumpkin bread.
Number of Servings: 24

Ingredients

    1.5 cup sugar
    1.75 cup flour
    3/4 tsp salt
    1/2 tsp cinnamon
    1/2 tsp nutmeg
    1 tsp baking soda
    1/2 cup applesauce
    1 cup pumpkin
    1/3 cup water
    2 eggs

Directions

Combing all dry ingredients and mix well. Add pumpkin, water, applesauce and eggs. Mix well and pour into loaf pans. Makes 24 servings (I use 3 mini loaf pans). Bake for about 1/2 hour at 350. Two servings is 3 weight watchers point.

    I used just a little over 3/4 cup of sugar, and these were still great! I also doubled the cinnamon and upped the nutmeg slightly and I used skim milk rather than water. I sprinkled them with a few chopped walnuts and a bit of cinnamon. YUM! - 2/15/10

  • I like to have precise directions when baking because I don't trust my gut too much. I used a 9.25x5.25 loaf pan and it required 55 minutes in the oven. It came out beautiful! Very moist and delicious! I love that there are no artificial ingredients here. My kids liked it as well. Thx! - 10/17/12
