    4 medium to large bananas
    2 tablespoons lemon juice or vinegar
    1/4 cup lowfat yogurt
    1 cup milk (nonfat or 1%)
    1/3 cup sugar (unbleached or white)
    1 1/3 cups whole wheat flour
    2/3 cup buckwheat flour
    3/4 teaspoon baking soda
    3/4 teaspoon baking powder
    1/4 teaspoon salt
    1/4 cup walnuts (optional)


Preheat oven to 350 F (175 C).

In a large mixing bowl, mash bananas with a fork. Add lemon juice (or plain white vinegar, which is what I had on hand), yogurt, milk and sugar. Stir well to combine.

In a separate bowl, combine flours, baking soda, baking powder, salt and walnuts.

Add dry mixture to banana mixture and stir until just combined (do not over-mix).

Spray or wipe a muffin tin with oil. Divide batter evenly among cups and bake until a toothpick inserted in the top comes out clean, 15-20 minutes.

Makes 12 muffins.

Note: Don't bake these muffins in paper cups unless you plan to add at least 1/2 c. oil/butter in place of 1 banana and the yogurt. They will stick terribly. Also, the muffins (being as low fat as they are) will taste better once they've cooled -- I promise. So be patient!
