    4 Yukon Gold Potatoes, peeled and cut into 1/2 inch pieces
    4 Leeks, white and pale green parts only, cleaned and chopped
    1 Large Onion, chopped
    5 cups of vegetable broth (we used our homemade stock which is also uploaded)
    1/4 tsp pepper
    salt to taste


Combine potatoes, leeks, onion, broth and pepper in a large pot and bring to a boil. Reduce heat and simmer, covered, until vegetables are tender, 20-25 minutes.

Puree and serve.
