    i large onion, chopped
    1 head celery, chopped
    1 10 oz pkg match stick carrots
    1 head endive or chickory chopped
    2 11.5 oz cans V-8 juice
    1 11 1/2 oz can vegetable broth
    6 cups chicken broth
    6 cups water
    16 oz bag pearled barley


Chop and cook endive/chickory. Set aside. In large pot add chicken broth, vegetable broth,water, celery, carrots, onions and chicken. Bring to boil and simmer until chicken is cooker. Remove chicken and cut into bite sized pieces. Return to pot. Add V-8 and endive/chickory. Bring to boil again and add pearled barley. Simmer for 45 minutes. Makes 16 2cup servings
