A hearty soup that thickens itself. A hearty soup that thickens itself.
Number of Servings: 6


    1 can yellow corn, 15 oz or more
    medium onion chopped
    half red bell pepper chopped
    4 slices bacon, fried and drained (reserve 1 tsp grease in pan)
    1 can chicken broth
    1 can water
    1/2 c milk
    1.5 potatoes peeled and cut into 1/2 inch cubes
    one half potato reserved
    1/4 tsp paprika
    Mrs. Dash
    salt and pepper to taste


Fry bacon and drain, reserving 1 tsp grease in pan. Add onion and pepper and saute a few minutes. Transfer to large saucepan and add, corn, water, broth, cubed potato and seasonings. Heat to boiling and reduce to simmer. Grate remaining half of potato into soup. This will cook and thicken instead of flour. And it is more nutritious. Cook about 15 min or until potatoes are cooked. Serve in bowl topped with crumbled bacon bits.
