    2 cups finely chopped peeled and cored apples
    1 cup sugar
    1/4 cup canola oil
    1 large egg
    1/2 cup all purpose flour
    1/2 cup whole wheat flour
    1 tsp cinnamon
    1 tsp baking soda
    1/4 tsp. vanilla extract
    1/2 cup nuts, if desired


Combine first 2 ingredience; let stand for half an hour.
Sift dry ingredients together into bowl.
Add the apple mixture, oil, beaten egg, and vanilla to the dry ingredients
Stir until well blended.
Place batter into greased 9" square pan and smooth top.
Sprinkle nuts over batter. Bake at 350 F for 45-50 minutes.
