Introduction

Ingredients

    Marinade:
    2 limes, juice
    1/4 cup vinegar (I used red wine vin but rice or basalmic would probably work and give it a different character)
    1 tbsp sunflower oil
    1 tbsp soy or fish sauce
    2 tsp diced ginger, fresh
    2 tsp Hot sauce of your choice (hotter the better)
    1/4 cup brown sugar loose

    1 box DeBole's Multigrain pasta penne, cooked as per instructions on package (only pasta I have found that everyone likes!)
    2 boneless skinless chicken breast, sliced thinly 1/4" or less
    3 carrots
    1 stack celery
    1 fennel bulb
    3 cups or so collard greens (I used one bunch of short leaves)
    2 cloves garlic, diced
    1 can diced tomatoes
    1 tbsp sunflower oil
    dash of baking powder to make the tomatoes tastier

Directions

Makes five good servings.

Mix together the marinade ingredients and add the chicken slices. Toss in the fridge for a half hour. Slice all the veggies thin and as close to the same thickness as possible. Mandolin is perfect for this. =) Add oil to pan and heat to medium high. Add carrots. Cook til just starting to bend. Add fennel and celery. Cook til just starting to soften. Add chicken with the marinade. Cook for a couple of minutes until the marinade is boiling rapidly. Add tomatoes with their juice and baking powder. Cook for about 5 min. Add greens and garlic. Cook till greens are bright green and very tender and chicken is done. Add noodles and remove from heat. Stir and serve.
