    1 lb. grated fresh Baking Potato
    1/2 cup Whole Wheat Flour
    1 tbsp. Whole Wheat Flour
    1/3 cup grated Parmesan Cheese
    4 Scallions, finely chopped
    3 large Eggs
    4 tbsp. Extra Virgin Olive Oil
    1 1/2 lbs. Turkey cutlets, white meat, pounded thin


1. In a wide, shallow bowl, toss the shredded potatoes with the 1 tbsp. of flour, then with the parmesan cheese & scallions. Place eggs in another wide, shallow bowl and beat lightly. Place the remaining 1/2 cup flour in another shallow bowl.

2. In a large, non-stick skillet, heat the oil over medium heat. Working with one piece at a time, coat the turkey cutlets in the flour, shaking off the excess. Then, dip in the egg and transfer to the potato mixture, pressing the potato into each side.

3. Cook the cutlets in the skillet, turning once, until the potato coating is golden and crisp--about 5 minutes each. Transfer to parchment paper or paper towel to drain.

Serves 4--approx 5-6 oz. turkey each.
