    2 tbsp extra virgin olive oil
    1 lb Ground Turkey
    1 med. yellow onion, chopped
    2 tsp chopped or minced garlic

    1/2 tsp sugar
    crushed red pepper ( to taste)
    salt and pepper (to taste)
    Italian Seasoning or fresh seasonings (parsley, oregano, basil - chopped)

    1 large (22, 24 oz?) can of crushed tomatoes
    1 12oz can diced tomatoes
    1 small can tomato paste


Use a large pan like a dutch oven. Turn heat on med-high. Add olive oil, onions, garlic and crumbled up meat. Cook until meat is done and onions are soft, stirring occasionally. Drain the fat. Drain half of the water from the can of diced tomatoes and add to the pan with the meat, stir in. Add a minimum of seasonings (except the sugar) and heat until all is hot. Add the crushed tomatoes and stir. Heat on medium for about 10 minutes then check for taste and thickness. If it's too thin, add a little tomato paste until it's thick enough - you want it to cling to the noodles. Add more seasonings as needed. If the sauce is too acidic, add the sugar. Cook on low heat until noodles are ready.
