Introduction

I have tried to cut back on the sodium but it is still quite high with the Velveeta. Perhaps cheddar is a better choice but I haven't tried it. If it works, I'll adjust the recipe. Ingredients

    1 litre low sodium chicken broth
    3 cups fresh or frozen chopped broccoli
    1/2 cup chopped onion
    1 large potato, peeled and chopped
    1 can non-fat evaporated milk
    4 oz Velveeta cheese, cubed

Directions

Combine first 4 ingredients in large saucepan, bring to a boil then simmer until potato and broccoli are well cooked.
Puree with blender or hand blender until smooth. Add milk and cheese. Stir over low heat until cheese melt. Try not to let soup boil after adding milk, it will curdle. A quick mix with the blender will help if this happens.
Makes 6 -1 cup servings
