Ingredients

    4 cups shredded romaine lettuce
    1 cup frozen corn, thawed
    1/4 medium red onion, chopped (about 1/2 cup)
    2 medium tomatoes, cut in chunks
    2 tbsp lime juice
    2 tsp dijon mustard
    2 tbsp low sodium chicken broth
    2 tsp canola oil
    Salt and pepper to taste
    1 small ripe avocado, cubed (about 1/2 cup)

Directions

Toss lettuce, corn and onion together. Add tomatoes.
In a medium bowl, whisk lime juice and mustard together. Whisk in broth and oil. Add salt and pepper to taste. Toss avocado in dressing. Spoon avocado and dressing over salad.
Serves 4.
