    2 Boneless Skinless Chicken Breasts
    3oz Package cream cheese
    1/2 cup Sour cream
    1/2 cup shredded Monterey Jack cheese
    1 1/4 cups Newman"s Own Pineapple salsa
    7 Tia Rosa, or any tortillas
    1/2 cup Mozzarella


chop the chicken breast into small, bite-size pieces. Cook until lightly done in a medium saucepan on medium heat. Turn to low heat, and add the cream cheese, sour cream, and Monterey Jack cheese, and stir, allowing the mixture to melt and thoroughly coat the chicken. Place a line of the mixture into a tortilla, roll it up tightly and place in a deep 13x9 pan. Prepare enough tortillas to fill the pan a single layer deep (about 7). Spread salsa over the tortillas, and then spread mozzarella over the salsa. Cook at 350 for 15-20 min, or until mozzarella begins bubbling.
