Introduction

An exquisite combination of cranberry and mustard bestows a tangy flavor to the tenderloin. You can create your own cranberry sauce to control the sugar (not included in the recipe).

For even cooking, I place the pork on foil balls in the slow cooker. You can use halved potatoes, too.

Ingredients

    1 16 oz can whole berry cranberry sauce
    3 Tbs fresh lemon juice
    4 Tbs Dijon mustard
    3 Tbs brown sugar
    2 lbs pork tenderloin

Directions

1. In a small mixing bowl, combine the cranberry sauce, lemon juice, and brown sugar. Spread mixture over the pork and place in the slow cooker. Pour the remaining cranberry mixture over the tenderloins. Cover and cook on low 8-10 hrs (or on high 4-5 hrs)

Makes 6 servings.
