Ingredients

    2 Whole Wheat Tortillas
    1/4 c. black beans
    1/4 block of extra firm tofu
    1/4 c. Brown Rice
    1/4 of an avocado mashed
    1/2 c. chopped peppers
    1/4 c. chopped onion
    1 clove garlic crushed or diced
    3 tbs. alfalfa sprouts
    1/2 c. Baby lettuce
    1/4 tbs. EVOO
    2 tbs. Balsamic (or can use other desired sauce like Soy Sauce, hot sauce, etc.)

Directions

Chop and prepare ingredients.

Heat a skillet at medium high heat, and heat conventional oven at bake 350 degrees- put wraps in oven for 5 minutes to heat.

Once skillet is heated add EVOO, tofu, peppers, onions, garlic, and beans. Saute for 5-10 minutes or until veggies get soft and tofu begins to brown.

Mash avocado and spread it onto wraps. Add lettuce and sprouts. Add sauted items to wrap, balsame (or other sauce) fold, and enjoy :)
