    3 bonelees, skinless chicken breast
    1 boneless, skinless chicken thigh
    1 cup green peppers, chopped
    1 cup onions, chopped
    1 cup celery, chopped
    4 cups canned tomatoes
    1 can 12oz. can low sodium V-8 juice
    4 tbsp. olive oil
    8 cloves garlic, chopped
    1 cup cooked pinto beans
    1 cup cooked kidney beans
    1 cup cooked white beans
    salt and pepper to taste
    2 tbsp. chili sauce
    1 tbsp. chili powder
    .5 tsp. mustard seed
    1 tsp. crumbled bay leaf


1. If using dry beans- bring beans to boil and soak for 1 hour-included in prep time.
2. Saute onion, celery, green pepper, garlic in olive oil until tender. Add diced chicken, chili sauce, and salt pepper cooked through.
3. Add chicken mixture, beans, canned tomatoes, V-8 juice, and remaining spices to large pot, bring to boil, then lower heat and simmer for 2-3 hours. If using dried beans. Simmer for 30min. -1 hour if using canned beans.
Yields 24, 1 cup servings.
