    1 1/2 cup brown sugar
    2/3 cup oil
    1 egg
    1 cup buttermilk
    1 tsp salt
    1 tsp baking soda
    1 tsp vanilla
    1 1/2 cup flour
    1 1/2 cup rhubarb, diced
    1/2 cup nuts, chopped (i.e. walnuts)
    1/2 cup sugar
    1/2 tsp cinnamon
    1 tbsp butter


Combine all ingredients except sugar, cinnamon and butter in order given. Pour into 2 greased 9*5 inch loaf pans. Blend sugar, cinnamon, butter; sprinkle over batter. Bake at 352 degrees for 60 minutes. Do not over bake.

Make sure to cut each loaf into 15 slices, otherwise it's easy to go over on servings!!

Can replace sugar with Splenda, also try adding flax seed.
