Ingredients

    * Water, tap, 2.5 cup (8 fl oz)
    * Limes, .5 fruit 2 thick slices
    * Ginger Root, 2 slices (1" dia)
    * Salt, .5 tsp
    * White Rice, jasmine, long grain, 1.5 cup
    * Butter, salted, 2 tbsp
    * Peanuts, dry-roasted, salted .25 cup
    1/2 tbs lime zest
    2 chopped green onions

Directions

Boil water, lime slices, ginger and salt. Add rice and return to boil. Cover and simmer 18 minutes. Remove from heat, add butter, lime zest, onions and chopped peanuts. Great with grilled salmon and baby bok choy with ginger.

    This was a little bland for me. I added a peanut sauce over the top to dr. it up a bit. - 5/19/11
