    2 lbs. piquito beans

    1 lb. leanest ground beef

    2 tsps. salt

    3 cloves garlic, diced

    1 can tomatoes with jalapenos, undrained

    1 large onion, diced

    1 14.4 oz. can tomato sauce

    3 TBS. chili powder, divided

    1 TBS. cumin

    2 TBS. oregano leaves, crushed

    1/2 cup chopped ham for seasoning.


Clean and rinse beans. Put into large pot; cover with water. Add 1 TBS. chili powder, 1 tsp. salt, half the diced onion and ham for seasoning. Stir well. Bring to a boil; turn on low and cook for 3 hours or until beans are totally tender.

Meanwhile, in large skiller brown ground beef. When barely pink, add rest of onion and garlic. Cook until onion is tender. Add 2 TBS. chili powder, cumin, oregano and 1 tsp. salt. Then add canned tomatoes and tomato sauce. Mixing in well. Turn on low and simmer for 20 minutes, stirring often.

When beans are almost done, add meat mixture and cook another 30 minutes.
