    1 can 15.25 succotash
    1 12 oz. can fat free evaporated milk
    1 cup shredded Monterrey Jack cheese
    2 eggs, beaten
    1/4 cup onion, diced
    1/4 cup diced red pepper
    1/4 tsp. ground pepper
    1/4 cup saltines, crushed
    1/4 cup bread crumbs


In a large bowl combine succotash, evaporated milk, eggs, onion, diced red pepper, ground pepper and saltines. Place in a 2 quart casserole dish. Sprinkle bread crumbs over mixture. Bake at 350 for 50 to 60 minutes. Let stand 5 minutes. Makes six servings.
