Ingredients

    1 Spaghetti Squash
    2 T. olive oil
    1 onion, chopped
    1/2 green pepper, chopped
    3 T. black olives, sliced
    1 1/2 c. cherry tomatoes chopped
    1/2 c. feta cheese, crumbled
    1 to 2 cloves garlic chopped
    2 T. chopped fresh basil

Directions

1. Preheat oven to 350 degree and place halved spaghetti squash cut side down on baking sheet or dish with 1 1/2 c. water. Bake for 30 min. Remove squash from oven and set aside to cool enough to be easily handled

2. Meanwhile heat oil in skillet and saute, onion, green pepper and garlic.

3. Stir in tomatoes, olives, basil and heat until warmed thru.

4. Scoop squash out using a fork so it resembles spaghetti. Toss with cooked vegetables and cheese. Serve.
