    2 Egg whites
    1/4 c. chopped bell peppers
    1 T. Shredded Monterey Jack/Cheddar Cheese
    4 sec spray of Olive Oil Pam Cooking Spray
    1/8 t. salt
    1/8 t pepper


Spray Olive Oil Pam (3-5 seconds) into a non-stick skillet. Heat on low-medium.
Separate egg whites from 2 eggs. Chop 1/4 c bell pepper. Add a dash of salt and a little black pepper to the egg whites, Whisk eggs. Pour egg whites into skillet. Allow them to cook slightly, Add bell peppers and 1 T shredded jack/cheddar cheese on top of eggs. Cook until done.
