Ingredients

    6 Eggs
    1/2 c. non fat milk
    1/4 tsp. salt
    1/8 tsp. pepper
    1 c. 2% shredded cheese
    3/4 c. finely chopped zucchini
    1/4 c. finely chopped red bell pepper
    2 T. finely chopped red onion

Directions

Preheat oven to 350 and coat 36 muffin cups with non stick spray.

Beat eggs, milk, salt and pepper in bowl. Add cheese, zucchini, bell pepper and onion; mix well. Spoon about 1 T. egg mixture into each muffin cup.

Bake at 350 just until set about 10 - 13 minutes.

Can top each with 1 tsp. cream cheese and place on crostini to be served as appetizers, but this is not included in the nutritional calculations.
