I'm Lebanese, so I'm picky about my hummus. That stuff you buy in the grocery store is nasty - this is where it's at!

Hummus is delicious in sandwiches, with pita bread, or as a dip for fresh vegetables - especially delicious with red bell peppers... YUM CITY!!!

Hummus is delicious in sandwiches, with pita bread, or as a dip for fresh vegetables - especially delicious with red bell peppers... YUM CITY!!!

Number of Servings: 15

Ingredients

    2 cans chickpeas (3.6 cups), drained
    4 tbsp olive oil
    2 tbsp tahini
    2 cloves garlic (chopped)
    2/3 cup lemon juice
    Reserved chickpea juice

Directions

Drain liquid from chickpeas into separate container.

Juice 1 - 2 lemons (or use lemon juice).

In a food processor add chickpeas, olive oil, tahini, garlic, lemon juice. Add chickpea juice till hummus achieves desired consistency.

Makes 15 servings (1/4 cup each).

  • Do you cook and remove the skins from the chick peas? I generally do that because I like how smooth you can make the hummus that way. :) - 1/31/10

    Nope - I use canned chickpeas and the canned liquid and put it through the processor for awhile. I'll have to try that though - my hummus is smooth, but never really creamy.
