    1 tbsp olive oil
    1 medium onion chopped
    3 cloves of garlic minced
    1 large red pepper chopped
    2 large zucchini chopped
    3 cups diced tomatoes- canned
    2 cups water
    2.5 cups textured soy protein crumbles
    2 15 oz cans of cannellini beans
    2 tbsp cumin
    1 tbsp oregano
    salt and pepper to taste


Heat olive oil, add onions through zucchini and saute, stirring occasionally for 10 minutes. Add all remaining ingredients and bring to a simmer. Cook for 30 minutes. Add water as needed.
