Introduction

Ingredients

    DRY
    3/4 c whole wheat flour
    1/2 cup oats
    1 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp cinnamon
    dash salt
    2 tbsp ground flax
    stevia, to taste

    WET
    1 cup mashed banana
    1 tsp olive oil
    1/2 tsp vanilla extract
    1 egg white

    2 tbsp pecan pieces

Directions

Sift the dry ingredients together thoroughly in a large bowl.

In a medium bowl, whisk wet ingredients together.

Fold in wet ingredients into dry, mix until batter is moist (not too much).

Spoon into 6 greased or lined muffin tins. Sprinkle with pecans.

Bake at 350 for 25-30 minutes, until done.

Serves 6.
