The title says it all. This is a great way to make Mac&Cheese without having "powder" cheese. The title says it all. This is a great way to make Mac&Cheese without having "powder" cheese.

    1 box (14.5 oz) Ronzoni Smart Choice Elbow Macaroni
    5 oz. Velveeta 2% Milk cheese spread
    1/4 cup Skim Milk


Cook macaroni according to box instructions. While macaroni is cooking, cut the cheese into 1 inch or smaller cubes. Drain cooked macaroni well. Put cheese and milk into the pan that was used to cook the macaroni (while macaroni is draining); stir constantly until cheese is melted to make a cheese sauce. Add cooked macaroni and stir until macaroni is completely covered with cheese sause. Serve.
Makes 8 servers, approximately 1 cup each.

  • Didn't have macaroni so I made this with Barilla Plus Penne. Not enough cheese sauce. My boys added shredded cheddar to theirs, but I kept my as is to keep it low fat. Not thrilled with this recipe. I may try it again with elbow macaroni. - 7/19/10
