Ingredients

    1 cup vegetable broth
    1/4 cup chopped dried apricots
    1/4 cup golden raisins
    1/2 cup dry couscous
    1 teaspoon ground cinnamon
    1/4 cup slivered almonds, toasted

Directions

Pour the vegetable broth, dried fruit & quinoa into a large saucepan, and bring to a boil. Cook on low until all water is absorbed by quinoa, about 10-15 minutes. Stir in cinnamon & almonds; serve.
