Ingredients

    Filling
    1 lb ground beef
    1 cup chopped onion
    1 minced jalapeƱo pepper (i used 1 dried)
    2 tsp ground cumin
    1 tsp salt
    1 14.5oz can crushed tomatoes
    4 cups corn
    *
    CORNMEAL CRUST
    3/4 cup yellow cornmeal
    1 tsp salt
    1/4 tsp black pepper
    *
    Topping
    1/2 cup grated pepper jack cheese
    1/2 cup grated cheddar cheese

Directions

Preheat oven to 350 degrees
make filling:
brown ground beef (drain)
add onion, pepper & cumin cook til onion is soft
stir in tomatoes& corn, add salt & pepper (to taste)

Make cornmeal crust
Whisk cornmeal with 3/4 cup cold water.
in meduim sause pan bring 1 1/4 cups water, salt & pepper to a boil
gradually stir in cornmeal mixture, reduce heat & simmer, stirring often until very thick, 4-5 minutes.
pour into sprayed 9"x8" deepdish casserole pan, top with filling and grated cheeses
bake 15 minutes to melt cheese
