Introduction

Ingredients

    5 cups of whole wheat pasta (small shells work well)
    2 cups broccoli chopped into small florets
    3 ounces of baby spinach
    1/2 a medium onion
    2 cloves of garlic
    1 tbsp olive oil
    1 large can of chicken breast (You could also use a fresh chicken breast, canned is just quick and simple)
    1 cup nonfat milk
    1 cup cottage cheese, 2%
    1/2 cup cheddar cheese
    2 eggs
    Panko breadcrumbs (or regular breadcrumbs)
    1 tbsp parmesan cheese
    salt and pepper to taste

Directions

Preheat oven to 350.
Heat the olive oil in a pan, add the onion and garlic and saute for a few minutes, then add the broccoli with a little water and let it steam until they are bright green, then add the spinach.
Cook and drain the pasta while you are preparing the veggies.
In a bowl combine the milk, cottage cheese, cheddar cheese, and eggs (hold the parmesan til the end). Salt and pepper this mixture.
In a glass baking disk combine the pasta the vegetable mixture and the chicken. Pour the liquid mixture over the top (mix in if needed).
Cover the top of the casserole with the breadcrumbs and finish with parmesan.
Bake for 35-40 minutes, until the top is golden and the edges bubble.

This could also make a nice vegetarian dish, substituting mushrooms for the chicken!
