A very easy, very tasty white chicken chili! A very easy, very tasty white chicken chili!
Number of Servings: 12


    2 Tbsp. canola oil
    1 cup chopped onion
    1 jalapeno, seeded, minced fine
    1 tsp salt
    1/2 tsp black pepper
    1 Tbsp ground cumin
    4 cups low-sodium chicken broth
    2 cups cooked chicken, shredded (from rotisserie chicken)
    3-15 oz cans great northern beans, drained and rised
    1 1/2 cups salsa or picante (your favorite)
    2 Tbsp fresh cilantro, chopped, for garnish


Makes 12 1-cup servings.

Heat oil in dutch oven over medium-high heat until shimmering. Add onion and cook until semi-translucent, about 5 minutes. Add salt and pepper. Add jalapeno and cook for 1 minute. Add garlic and cook for 30 seconds to 1 minute. Add cumin and allow spice to cook, about 2 minutes. Add chicken broth and scrape any bits off bottom of pan with a wooden spoon.

Drain and rinse beans thoruoughly. Puree 1 can of beans until smooth (food processor or blender works fine), using a little extra chicken broth to smooth it out. Add bean puree and remaining 2 cans of whole beans to soup. Blend salsa in food processor for a few pulses. Add to soup.

Bring to a boil, cover, lower heat to a simmer for 15 minutes. Add cooked chicken and simmer for an additional 15 minutes. Serve with chopped cilantro.

(Can also add shredded monterey jack cheese as garnish. Cheese not included in nutritional info.)
