    1 lb of Salmon fillets
    10 medium Baby Carrots
    1/4 cup chopped fresh Cilantro
    Juice of 1 lime
    1/4 teaspoon ground Cumin
    1 1/2 cup fresh Green Beans cut into bite size pieces


Heat oven to 350 degrees.
Place salmon skin side down on a piece of foil large enough to wrap all ingredients.
Surround by carrots.
Sprinkle with half the cilantro, cumin and lime juice.
Mound green beans on top of salmon.
Sprinkle with remaining cilantro, cumin and lime juice.
Wrap snugly in foil folding edges together well to prevent leaks.
Place on cookie sheet in the center of the oven and bake for 25 - 30 minutes.
Remove from foil and serve immediately.
Makes 2 - 4 servings.
Accompany with rice and garnish with sliced almond to complete the meal.
Okay to use lemon or orange juice as substitutes for the lime juice.
