    16 oztop sirloin
    6 T butter
    1/4 c flour
    1/4 t oregano
    2 cloves garlic, chopped
    4 c low-sodium beef broth
    2 c green chile strips, cut into small pieces


Cut meat into bite-sized pieces and sear quickly in a hot, dry skillet. Meat should be browned on inside and rare on inside. Remove to a separate bowl for reheating later.

Over medium-high heat, melt butter in skillet. Add the flour, oregano, and garlic, mixing thoroughly. Do not let mixture brown. Add salt and beef broth, keeping some aside. Stir well to make a moderately thick gravy. Be sure to incorporate all the brown bits on bottom of pan. Add green chiles and boil for 1 minute.

Don't return meat to gravy until ready to serve. At that time, thin gravy if necessary with reserved beef broth and add meat to reheat quickly. Serve with warm tortilla or green salad.
