Ingredients

    2 1/2 C whole wheat penne pasta or rotini
    3 C broccoli, cut into florets (or substitute frozen, chopped broccoli)
    1 lb skinless, boneless chicken breast, cut into bite-sized pieces
    1 tsp adobo seasoning
    1 clove garlic, minced
    1/4 C fat-free cream cheese, softened and cut into small pieces
    2 Tbsp shaved Parmesan cheese

Directions

To make adobo seasoning, if not readily available, combine 1 teaspoon each: onion powder, cumin, cayenne pepper, oregano, black pepper, and garlic powder. You will only need 1 tsp of the mixture for this recipe. Store the remainder in a dry container.

Cook pasta according to package directions. Add broccoli for the last 5 minutes of cooking time. Drain well.

Meanwhile, combine chicken pieces and adobo seasoning, coating chicken well. Prepare a large skillet with cooking spray. Heat skillet to medium. Add garlic and stir for about 30 seconds. Add chicken pieces. Cook chicken thoroughly, stirring occasionally, about 3 to 5 minutes.

Add pasta and broccoli to the chicken skillet. Stir in cream cheese. Cook over low heat until cream cheese has melted and coated the mixture.

To serve, sprinkle with parmesan cheese.
